Brown Sugar Fudge

Today I decided to share a brown sugar fudge recipe. It's a childhood favorite and still is quite popular at home. I always thought the brown sugar made it healthy. Clearly, I was in denial. What can I say, I really love it :)

Ingredients

2 1/2 cups brown sugar
1/4 cup evaporated milk
1 1/2 tbsp margarine
1 1/2 tsp vanilla

 Method

Combine everything and spread evenly in a square dish. Let cool until firm and read to cut into little squares.

Chocolate Cake

Hey bloggers! I literally WH!PD this chocolate recipe up a couple days ago. It's fantastic and all because of a little trial and error. A fun and surprising day indeed. I'm sure you can tell how much I love chocolate :)

Ingredients

1 small sour cream
3 medium eggs
1 thin stick of butter
chocolate pudding
1 pack Duncan Hines chocolate
1 cup carnation milk
1/2 cup water
1 pack chocolate chips


Chocolate lovers...I am positive you will want more !

Gulab Jamoon

A special hello from WH!PD to all our fans. Today I want to equip you with another great recipe for Divali. It's a family tradition to make 'gulaab jamoons' on Divali and here's a family old recipe :) Just think about a delicious sugar coated dough.

Ingredients

1 cup flour
1 cup powdered milk
4 tbs clarified butter (ghee)
1/2 cup carnation milk
1/4 tsp elaichi

Method

Knead all ingredients together. Then leave for about 15 minutes. Then form into little blankets and fry in oil or ghee until golden brown for about 3 minutes on either side. 

Following this, you will need to create your 'paag' which is a boil of sugar and water. You will need two cups of sugar, about 1 tbs of fresh ginger pieces for flavour and 1 cup of water. You will need to boil all ingredients until it spins a thread. This will occur about 10 minutes after.

At the end, add all of the 'paag' over the fried pieces of dough. 

There you have it ladies ! An excellent recipe that you can use for Divali.

Brownies

Hello! Who doesn't love brownies!? They're perfectly chewy. The are the ultimate combo of a cake and cookie.

Here's a recipe that never let me down ! Those nights when I wanted something with my ice cream or just something to snack on during my movie, this recipe was always my go to :)


Ingredients


1 cup flour
3/4 cup brown sugar
1/4 tsp salt
1/2 cup cocoa
5 oz softened butter
2 tbsp water
1 1/4 tsp vanilla
2 eggs 
1/4 cup Hershey's chocolate chips or 1/2 cup chopped walnuts.

Method

The method is very simple. Mix dry ingredients and wet ingredients separately. Then mix until you achieve the right consistency.

Personally, I would go for the chocolate chips. They are so delicious and they make for an even better brownie.

Ladoo

Hello ! Today I want to share a family recipe used for the Hindu Festival of Lights, Divali. It's a recipe for ladoo, a ball shaped sweet made of split peas.

Ingredients

4 cups grind split peas
4 sticks unsalted butter
2 1/2 cups sugar
1/2 cup dry powered milk
1/2 cup crushed almond
1 tsp ground elaichi
1 tsp fresh ground ginger
1 tbsp condensed milk

Method

Let the pot heat and place unsalted butter. Place split pea to parch in the butter in low heat for about 20 minutes. Then add elaichi, ginger and almonds. Remove pot from the heat then add sugar and powdered milk. Following this, let cool for about 15 minutes and then add condensed milk. Finally, roll into golf sized balls.


Fun Fact

Do you know the other name for elaichi? It's cardamom !

Puffs

Hey Bloggers ! Do you need the perfect pastry for a little kid's party, a cocktail party or just the perfect finger food for any event !? Luckily, I'm here to help with that.  It's delicious, creamy, and you can fill it with anything whether it be cheese, chicken or tuna. They're called puffs :)


You will need the following...

Ingredients 

1 1/4 cups boiling water
5 oz margarine or butter
1 cup all purpose flour
4 medium eggs


Method

Firstly, bring the margarine and water to a boil ( wait for it to bubble). Then, add all the flour at once and keep stirring until it forms a dough. Immediately after, remove from heat and let it cool for about 10 minutes. Add eggs one at a time and beat well. You will now have the puffs dough. You can then use a piping instrument to get a perfect medium puff shape. You can make them any size you want. just remember that the medium size will make about 16 puffs. Therefore, you can gage the number of puffs whether it be mini or large from this.

Tips

When placing the water to a boil, add bout two teaspoons more than the prescribed amount as it tends to evaporate quickly.

Fun Fact 

This recipe can also be used to make eclairs. So get some chocolate glaze ready and you can have two pastries !

Sweet Bread

This recipe compliments any cup of coffee. This sweet bread rivals any other I've eaten as it's light and moist !

Here's what you'll need for this local favourite:

Ingredients



1 cup sugar
3 tsp baking powder
fruits- 1 pack-about 1 cup
1 coconut or 2 1/2 cups
lime peel
2 eggs
1 1/4 cups flour
2 tbs butter
1 tsp essence

Method

Cream butter and sugar in a bowl. Then, beat eggs in, add essence and place the lime peel in for that flavour. In a separate bowl, combine flour and baking powder. Following this, combine both wet and dry ingredients slowly. Lastly, add the coconut and fruits. Bake at 350 degrees for 20 minutes in a baking sheet-drop them an inch apart or you can place them in a muffin pan. Either option is great !

Cassava Pone

Good Morning my fellow bloggers and viewers ! Today I'm feeling to make a sort of 'healthy' snack. It's a very popular Trinidadian dessert called cassava pone. It's made from root vegetables so just as you're thinking, the answer is yes. Yes, it is very popular amongst vegetarians.


Ingredients 

1 large coconut
2 tbs butter
2 tbs carnation milk
3 cups cassava ( DO NOT COMPACT)
1 1/2 cups brown sugar
1 tsp essence
1 tsp nutmeg
1 tsp spice

Method

Cream butter and sugar. Then mix in the carnation and cassava. Following this, add all of the other remaining ingredients in any order you would like too. Do not mix baking powder and spray spam or use butter alone for the bottom of the dish. Additionally, flour should not be placed at the bottom of the dish before baking. Bake at 350 degrees for 1 hr until it is perfectly baked with crisp ends and a beautiful golden brown on top.




NB: It is not cake. It is not pudding. Also, use brown sugar and less butter to make it even healthier.

Homemade Sponge Cake

A Trinidadian go to simple dessert :homemade spongecake. Are you looking for something to make for dessert after a Sunday lunch ? or are you looking for that classic cake with a hint of orange to offset your teatime or coffee  time? If so, a homemade spongecake just might be what you are looking for. It's perfect for all occasions. It's also a wonderful little something to take over to a friend's house for a Christmas lime. I've grown up seeing my mom whip this cake in 10 minutes and on days when she wasn't able to bake it, my dad would drive down to Mayaro and buy this amazing butter sponge cake from a local vendor. Pure talent on the Mayaro roadsides I would call it. Bloggers ! You must try it ! I guarantee you will love it :)

You will need the following :

Ingredients

2 cups sugar
2 sticks butter
5 eggs
2 1/2 cups flour
1 cup milk or 1/2 cup carnation milk or 1/2 cup orange juice
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp spice
1 tsp essence

Method

Cream the butter and sugar. In a separate bowl, mix the flour, spice, nutmeg,baking soda,baking powder.Then, beat eggs, milk and essence into the butter and sugar mixture. Following this, slowly add the flour mixture to the wet mixture and there you have it !




Whip it up and you can be a baker too !

Chocolate Chip Coconut Drops

Hi Bloggers ! Today I have a special treat. I couldn't get enough of the chocolate so I decided to create a recipe on the spot with two of my favourite ingredients until I got just the right consistency: coconut and chocolate chips. I'm guessing you think I really do have a passion for chocolate chips now huh ? Who doesn't !?

Ingredients

2 cups flour
1 small pack chocolate chips
half a coconut grated- approximately 1 cup coconut compacted
1 tsp baking soda
2 tsps baking powder
2 1/2 tsps butter
half tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla essence
2 tbsps carnation milk
2 tbsps cream cheese

Method

Mix the dry and wet ingredients separately. Then combine both mixtures.

NB: Do not let mixture sit. Bake immediately at 350 degrees for about 15-20 minutes.

Chocolate Chip Cookies

An all time favourite ! Chocolate chip cookies it is ! Great for an after school snack for your cookie jar ! It's an absolute winner with anyone, kids especially ! I love it crispy on the outside or as my grandma would say it 'cripsy' and chewy in the middle. Mrs.Fields has to be the best chocolate chip cookie ever, hands down. I love these cookies so much I just had to make them :)

Ingredients

2 cups flour
1 tsp. baking soda
1 tsp salt
1 cup butter or margarine
10 tbsps granulated sugar
2 eggs
2 tsps vanilla 
2 cups chocolate chips ( add more if you just love chocolate chips)

Method

Firstly, cream butter and sugar. Then in a separate bowl mix the flour, baking soda and salt together. Following this, beat in the egg and vanilla to the creamed butter and sugar. After, slowly add the flour mixture. Lastly, add chocolate chips. Roll the dough into mini balls on a greased sheet and place a little apart. Slightly press on each ball with a spoon to give shape to the mini chocolate chip cookie.

Barfi

Good morning bloggers ! By popular demand, here's another recipe from Eid-ul-Fitr ! I'm guessing you'll can't wait another year just to eat this delicious indian sweet. Gladly, I'm here to help with that :)

You will need:

Ingredients

2 lbs powdered full cream milk
2 cups double cream
3 cups granulated sugar
1 1/2 cups water
2 tsps rose water
5 pieces fresh ginger

Optional : add nuts and sprinkles on top

Method 

Firstly, mix the powdered milk and cream using fingers until very crumbly. Following this, have the sugar, water,rose water and ginger come to a boil for approximately 10 minutes before removing ginger. Combine milk mixture with this  and then firmly pack it into a small baking dish. Lastly, for aesthetic appeal, place sprinkles.

Sawine

   Hey bloggers ! For those of you who either celebrated Eid-Ul-Fitr, attended a family or friend's home for this sacred day or had a function in school or work I'm sure sawine was part of the dessert menu. In light of this beautiful day, I've decided to share the recipe to all those who absolutely love sawine. I know I do :)
   For those of you who don't know, sawine is a dessert for the Muslim festival of Eid-ul-Fitr.

Ingredients 

2 tbsps ghee ( clarified butter)
1 pack of vermicelli 
4 cups water
1/2 carnation milk
1/2 tin condensed milk
1 tsp cinnamon (1 stick)
3 drops of vanilla essence
3 cloves
optional: raisins and cherries

Method 

   After heating the pot, put two tablespoons of ghee in it. Then, break up the vermicelli into bite size pieces and place this is in the pot while turning constantly for a few minutes on low heat. Please make sure it doesn't burn. Following this, then add four cups water and let this come to a boil and add the remaining ingredients one by one leaving the milk for the last minute as this has a tendency to burn.

Red Velvet Cupcake with Cream Cheese Frosting

   Who doesn't love red velvet cupcakes!? They've become one of the most popular desserts in recent times. If you're looking for a perfect sweet something that has a hint of romantic to gift someone, or just a casual treat for coworkers to show appreciation, red velvet cupcakes with cream cheese frosting is the way to go. The cream cheese frosting really is the trick !

   There are tons of red velvet recipes everywhere. However, only a few gives you that rich, moist finish. When choosing red velvet recipes it is imperative that you have the eyes of a baker. I'm here to help with that of course. Below you will find the items you should look for when choosing the best recipe.

Ingredients

Butter
White Sugar
Eggs
Milk
Red Food Colouring
Vanilla Extract
Baking Soda
White Vinegar
All purpose flour
cocoa powder
salt
vegetable oil

Once the recipe contains these items, you are sure to have a moist cupcake (baked at the right temperature of course ). Additionally, cream cheese frosting is always a winner when paired with red velvet. Below is a recipe for cream cheese frosting. After the mixture is complete, place in the fridge and let sit until the cupcake has been cooled and ready to frost.

Cream Cheese Frosting

8 ounces cream cheese
4 ounces butter
1 1/2 tsps vanilla extract
5 cups sifter icing sugar

Chocolate Cupcake with Chocolate Buttercream Frosting

  Looking for all chocolate lovers ! The following are ingredients to create the most decadent chocolate cupcake you will ever have. It's delicious, it's moist, rich and beyond mouth watering.





Ingredients 
(serves 12)
1 cup butter
1 1/2 cup granulated sugar
3 eggs
1/2 cup cocoa
2 cups flour
3 tsps baking powder
1/4 tsp salt
1/2 cup whole milk
1/2 tsp vanilla


Chocolate Buttercream

1/2 cup unsalted butter ( preferable room temperature)
1 1/4 cup powdered sugar
1/2 teaspoon vanilla extract
2 ounces melted semisweet chocolate

Method

Cream magarine and sugar. Immediately after, add each egg one at a time to the mixture. Following this, place the cocoa powder. Then, sift flour and baking powder and add salt in a separte bowl.  The dry ingredients in the separate bowl should now be added slowly to the margarine, sugar and cocoa mixture. Add milk little by little until mixture in smooth. Pour in greased baking pan and bake for 40 minutes at 375 degrees F. Cool before frosting with chocolate buttercream. The frosting can be adorned with any edible topping.
